• Preheat oven to 240°C/220°C fan-forced.
• Cut potato into fries. Place on a lined oven tray. Drizzle with olive oil, season with
salt and toss to coat.
• Bake until tender, 20-25 minutes.
TIP: If your oven tray is crowded, divide fries between two trays.

• Meanwhile, finely shred baby cos lettuce (see ingredients).
• Thinly slice cucumber into rounds.
• In a medium bowl, combine the vinegar and a good pinch of sugar and salt. Add cucumber to pickling liquid. Add enough water to just cover cucumber. Set aside.
• In a second medium bowl, combine plant-based mince and savoury seasoning.
• Place flatbreads on a clean surface, then divide beef mixture evenly over one side of each flatbread and press down to spread.
TIP: Slicing the cucumber very thinly helps it pickle faster!

• When the fries have 10 minutes remaining, heat a large frying pan over high heat with a drizzle of olive oil.
• Cook flatbreads, meat-side down, until plant-based is browned, 2-3 minutes (cook in batches if your pan is getting crowded). Carefully transfer flatbreads, meat-side up, to a second lined oven tray and sprinkle with Cheddar cheese.
• Bake until cheese is melted and golden, 3-5 minutes.

• Drain cucumber.
• Divide smashed plant-based burger-style flatbread tacos between plates. Top with some
DIY pickles and cos. Drizzle over burger sauce.
• Serve with hand-cut fries. Enjoy!
