Cooking Steps

Cook the haloumi & chickpeas

  • Drain and rinse chickpeas.
  • Cut haloumi into 1cm-thick slices.
  • Cook haloumi until golden brown, 1-2 minutes each side.
  • Return frying pan to medium-high heat with a drizzle olive oil. Cook chickpeas, stirring, until tender, 2-3 minutes.
  • Add Middle Eastern seasoning and cook until fragrant, 1 minute. 

TIP: Add a splash of water if the chickpeas look dry.

Toss the slaw

  • Meanwhile, slice lemon into wedges.
  • Roughly chop coriander.
  • In a large bowl, combine a generous squeeze of lemon juice, the honey and a drizzle of olive oil. Add shredded cabbage mix, coriander, julienned carrot, currants and pepitas. Season to taste and toss to coat.
Heat the bread

  • Microwave pita bread on a microwave-safe plate until warmed through, 1 minute.
Finish & serve

  • Halve pita bread and fill with babaganoush, haloumi chickpeas and some slaw. Crumble over fetta cubes. 
  • Divide quick Middle Eastern chickpea pita pockets between plates. Serve with Greek-style yoghurt, any remaining herby slaw and lemon wedges. Enjoy!
