- Roughly shred baby cos lettuce. Thinly slice tomato into rounds.
- In a medium bowl, combine chicken thigh, peri-peri seasoning and a drizzle of olive oil
- In a large frying pan, heat a drizzle of olive oil over medium-high heat.
- Cook chicken thigh, turning occasionally, until browned and cooked through, 10-14 minutes. Transfer to a plate.
- Return frying pan to medium-high heat with a drizzle of olive oil.
- Cook bacon, turning, until golden, 4-5 minutes. Transfer to a paper towel-lined plate.
TIP: Chicken is cooked through when it's no longer pink inside.
- When corn has 5 minutes remaining, place bake-at-home burger buns on a plate and microwave in 10 second bursts for 1 minute.
- Wash out frying pan. Halve buns and toast, cut-side down, in the frying pan over medium-high heat until golden, 3-4 minutes.
TIP: If you don't have a microwave, you can bake the buns straight on the wire rack at 180°C/160°C fan-forced for 3 minutes, or until heated through.
- Spread burger bun bases with garlic aioli and peri peri sauce. Top with some cos lettuce, tomato, bacon and chicken.
- Serve with corn chips. Enjoy!
