- Preheat oven to 240°C/220°C fan-forced. Cut potato into fries.
- Place fries on a lined oven tray. Drizzle with olive oil, sprinkle with crispy
seasoning and toss to coat. Bake until tender, 20-25 minutes.
- In the last 5 minutes of cook time, remove from oven, sprinkle with Cheddar cheese and bake until golden and crispy, 5 minutes.
TIP: If your oven tray is crowded, divide between two trays.
- Meanwhile, finely chop tomato.
- Thinly slice spring onion (see ingredients).
- In a small bowl, combine peri peri sauce and the mayonnaise. Set aside.
- In a second small bowl, combine tomato and a drizzle of olive oil and white wine
vinegar. Season to taste with salt and pepper. Set aside.
- When the fries have 5 minutes remaining, in a large frying pan, heat a drizzle of olive oil over high heat.
- When oil is hot, cook beef strips and peri peri seasoning, tossing,
until browned and cooked through, 1-2 minutes.
- Divide cheesy fries between plates. Top with peri-peri beef and tomato salsa.
- Drizzle over perinaise.
- Dollop over small spoonfuls of mashed avocado and garnish with spring onion to serve. Enjoy!
