
Slippery rice noodles taste even better when they have an equally tasty sauce to pair with. Tonight, we've treated you to a peanutty Thai sauce, which coats the juicy pork mince and slurptastic noodles wonderfully. You can thank us later!

Rice Noodles
1 drizzle
olive oil

water
½ tbs
brown sugar
½ tbs
vinegar (white wine or rice wine)

• Boil the kettle. Half-fill a medium saucepan with boiling water.
• Cook rice noodles over medium-high heat, stirring occasionally with a fork to
separate, until tender, 4-6 minutes.
• Drain, rinse and drizzle with olive oil.

• While the noodles are cooking, thinly slice carrot into half-moons. Trim green
beans. Trim baby broccoli, then halve any thicker stalks lengthways. Halve lime.
• In a large frying pan, heat a drizzle of olive oil over high heat.
• Cook carrot, baby broccoli and green beans, tossing, until tender, 4-5 minutes.
Season to taste with salt and pepper. Transfer to a bowl.
• Meanwhile, in a small bowl, combine peanut butter, oyster sauce, the water,
brown sugar and vinegar, stirring, until smooth.

• Return the frying pan to high heat with a drizzle of olive oil.
• Cook pork mince and satay seasoning, breaking up with a spoon, until just
browned, 3-4 minutes.
• Reduce heat to medium, then return cooked veggies to pan. Add the peanut
sauce mixture and cook, stirring, until slightly reduced, 1 minute.
• Remove pan from heat, then add cooked noodles, tossing, until combined.

• Divide peanut pork and veggie rice stir-fry between bowls. • Top with chilli flakes (if using). Serve with lime wedges. Enjoy!
