Cooking Steps

Cook the eggs

• Boil the kettle. Half-fill medium saucepan with boiling water.
• Add the eggs and cook until soft-boiled or to your liking, 7-8 minutes.
• Using tongs, remove eggs from saucepan and cool in cold water.
• Carefully peel eggs, then halve.

Cook the chorizo

• Meanwhile, roughly chop mild chorizo. 
• In a large frying pan, heat a drizzle of olive oil over medium-high heat.
• Cook chorizo until golden, 4-6 minutes. Transfer to a bowl.

Cook the haloumi

• While the chorizo is cooking, cut haloumi into 1cm-thick slices.
• Return the frying pan to medium-high heat with a drizzle of olive oil. Cook haloumi until golden brown, 1-2 minutes each side.
• Remove from the heat, and the honey, turning to coat. 

Finish & serve

• Toast sourdough bread to your liking. Slice lemon into wedges.

• Divide bread between plates, then top with mashed avocado, chorizo, halloumi & egg. Garnish with dukkah and hot sauce (if using).

• Serve with rocket and lemon. Enjoy!
