
A Middle Eastern classic, kibbeh is a comfort-food hero made of finely seasoned beef and grains baked until warm, fragrant and deeply savoury. Paired with a vibrant cherry tomato salad, dollops of cool Greek yoghurt and crunchy toasted pine nuts, every bite hits that perfect balance of rich, fresh and nutty. vinegar (balsamic or white wine) (pantry)

• Preheat oven to 200°C/180°C fan-forced.
• Finely chop brown onion (see ingredients).
• Finely chop mint and parsley.
• Halve snacking tomatoes.

• In a medium saucepan, heat a drizzle of olive oil
over medium heat.
• Cook onion until tender, 3-5 minutes.
• Add Middle Eastern seasoning and cook until
fragrant, 1 minute.
• Add the water and bring to the boil. Add couscous
and stir to combine. Cover with a lid and remove
from heat.
• Set aside until the water is absorbed, 5 minutes.
Fluff up with a fork. Allow to cool.

• In a large bowl, combine beef mince, mint,
parsley, onion couscous, the salt and a generous
pinch of pepper.

• Grease a baking dish. Transfer beef couscous
mixture to baking dish, then spread evenly into a
2-3cm thick layer. Evenly sprinkle over pine nuts
and press them into the beef mixture.
• Use a butter knife or the edge of a spatula to score
the beef mixture, all the way to the bottom of the
baking dish, to create a pattern of diamonds.
• Bake kibbeh until browned and cooked through,
14-16 minutes.

• In a medium bowl, combine mixed salad leaves,
tomatoes and a drizzle of olive oil and vinegar.
Season to taste with salt and pepper.

• Divide loaded baked beef and herby couscous
kibbeh and cherry tomato salad between plates.
• Serve with Greek-style yoghurt. Enjoy!
