Cooking Steps

Cook the potatoes
1

• Preheat oven to 240°C/220°C fan-forced.
• Cut potato into bite-sized chunks. Zest lemon to get
a good pinch, then slice into wedges.
• Place potato on a lined oven tray. Drizzle with olive
oil, season with salt and toss to coat.
• Roast until just tender, 18-20 minutes.
• Lightly crush the semi-roasted potatoes on the
tray. Return to oven to roast until golden,
8-10 minutes.
• When the potatoes are done, add the lemon zest, a
good squeeze of lemon juice and season generously
with salt and pepper.

Get prepped
2

• Meanwhile, halve snacking tomatoes.
• Roughly chop Kalamata olives and dill.
• Finely chop garlic.
• Grate half the cucumber, then roughly chop the
remaining.
• Thinly slice red onion (see ingredients).
• In a small bowl, combine the vinegar and a good
pinch of sugar and salt.
• Scrunch sliced onion in your hands, then add it
to pickling liquid. Add enough water to just cover
onion. Set aside.

Make the garlicky tzatziki
3

• Heat a large frying pan over medium-high heat with
a drizzle of olive oil.
• Cook garlic until fragrant, 1 minute. Transfer garlic
oil to a medium bowl and allow to cool slightly.
• Add Greek-style yoghurt and grated cucumber.
Season to taste with salt and pepper.

Cook the chicken
4

• In a second medium bowl, combine chicken
tenderloins, Mediterranean seasoning and a
drizzle of olive oil.
• Return the frying pan to medium-high heat with a
drizzle of olive oil. Cook chicken tenderloins
until browned and cooked through, 3-4 minutes
each side.

TIP: Chicken is cooked through when it is no longer pink
inside.
TIP: If your pan is getting crowded, cook in batches for
the best results!

Toss the salad
5

• Drain pickled onion.
• In a large bowl, combine tomatoes, chopped
cucumber, pickled onion, olives, a drizzle of olive
oil and a good squeeze of lemon juice.
• Season to taste with salt and pepper.

Finish & serve
6

• Divide Greek chicken, zesty roast potatoes and
Kalamata olive salad between plates. Crumble over
fetta cubes and sprinkle over dill.
• Serve with garlicky tzatziki and any remaining
lemon wedges. Enjoy!

Review summary

Updated on Oct 2026
  • Flavour: Most customers enjoyed the meal, finding it very tasty overall. One reviewer felt it needed more yoghurt dressing and potatoes to balance the dish.
  • Suggestions: The tzatziki can turn out quite runny; grating and squeezing excess moisture from the cucumber before mixing may help achieve a thicker consistency.
