
Turn the flavour up a notch with these honey-glazed lean beef koftas, a refreshing cherry tomato salad and herby dressing. Every bite is sure to take you to your happy place. This recipe is under 650kcal and over 30g protein per serving.

• Finely chop garlic.
• Thinly slice red radish.
• Halve snacking tomatoes.
• Slice cucumber into half moons.
• In a medium bowl, combine lean beef mince, Middle Eastern seasoning, garlic,
fine breadcrumbs, the egg and salt.
• Using damp hands, roll beef mixture into koftas about 8cm long and 2.5cm thick
(3 per person). Transfer to a plate.

• In a large frying pan, heat a drizzle of olive oil over medium-high heat.
• Cook koftas, turning, for 6-8 minutes, or until browned all over and the koftas are
cooked through.
• Add the honey to the pan and turn koftas to coat.

• In a small bowl, combine dill & parsley mayonnaise and a splash of water.
Set aside.
• In a second medium bowl, combine radish, snacking tomatoes, cucumber and
spinach & rocket mix. Add a drizzle of the red wine vinegar and olive oil. Season
to taste with salt and pepper, then toss to combine.

• Divide cherry tomato salad between bowls.
• Top with honey-glazed Middle Eastern lean beef koftas.
• Sprinkle with flaked almonds.
• Drizzle with herby dressing to serve. Enjoy!
