- Preheat oven to 240°C/220°C fan-forced. Cut sweet potato into fries.
- Place on a lined oven tray. Drizzle with olive oil, season with salt and toss to coat.
- Bake until tender, 20-25 minutes.
TIP: If your oven tray is crowded, divide between two trays.
- Meanwhile, boil the kettle. Set your air fryer to 200°C.
- Place slow-cooked pork belly in a large bowl and cover with boiling water. Using tongs, remove pork carefully and pat dry using paper towel. (This step helps the crackling get crispy!)
- Using a sharp knife, score the skin in 1cm intervals, without cutting into the flesh. Rub all over with a generous pinch of salt.
• Cook bacon, turning, until golden, 4-5 minutes.
• Place pork into air fryer basket and cook until skin is
crackling (golden and crispy), 20-25 minutes.
TIP: No air fryer? Place pork pieces, skin-side down, on
a second lined oven tray. Roast until lightly browned,
15-20 minutes. Flip pork skin-side up. Heat grill to high.
Grill pork until skin is crackling (golden and crispy),
15-25 minutes.
- While the pork is cooking, roughly chop coriander.
- Using a vegetable peeler, peel carrot into ribbons.
- In a small bowl, combine sriracha and the mayonnaise. Set aside.
- Separate bacon slices and place on a second lined oven tray.
- Bake until golden, 10-12 minutes.
- When the pork has 5 minutes remaining, halve burger buns.
- Bake directly on a wire oven rack until heated through, 2-3 minutes.
- In a medium bowl, combine mixed salad leaves, carrot, coriander, a drizzle of olive oil and vinegar. Season to taste.
- Brush pork with char siu paste, then slice.
- Spread burger bun with sriracha mayo. Top each bun with coriander salad, pork, bacon and crispy shallots.
- Divide sweet potato fries and crispy char siu pork belly burger between plates to serve. Enjoy!
