Cooking Steps

Cook the prawns

  • In a large frying pan, heat a drizzle of olive oil over medium-high heat.
  • Cook peeled prawns, tossing, until pink and starting to curl up, 3-4 minutes. Transfer to a chopping board and allow to cool slightly.
Get prepped

  • Meanwhile, slice lemon into wedges.
  • Halve snacking tomatoes. Roughly chop baby cos lettuce.
  • Slice cucumber into thin rounds. Roughly chop coriander (including stalk).
  • Cut or tear bake-at-home ciabatta into bite-sized chunks.
Make the dressing

  • In a medium bowl, combine Greek-style yoghurt, mango chutney (see ingredients), curry powder (see ingredients), a generous squeeze of lemon juice and the mayonnaise. Set aside.
Make the croutons

  • When the prawns are done, wipe out frying pan and return to medium-high heat with a generous drizzle of olive oil.
  • Cook ciabatta until golden and slightly crispy, 5-6 minutes. Season to taste and transfer to a large bowl.
Toss the prawns

  • Roughly chop cooked prawns.
  • To the bowl with dressing, add prawns and currants, tossing until well combined. Season to taste.
Finish & serve

  • To the bowl with croutons, add cos, snacking tomatoes, cucumber, coriander, a generous squeeze of lemon juice and a drizzle of olive oil. Season to taste.
  • Divide salad between bowls. Top with creamy coronation prawns. Sprinkle over flaked almonds and serve with any remaining lemon wedges. Enjoy!
