Cooking Steps

Roast the chat potatoes

  • Preheat oven to 240°C/220°C fan-forced.
  • Halve chat potatoes.
  • Place potatoes on a lined oven tray. Drizzle with olive oil, sprinkle with savoury seasoning, season with salt and pepper and toss to coat.
  • Roast until tender, 25-30 minutes.

Bake the salmon

  • Meanwhile, season salmon generously with salt and pepper.
  • Pat salmon dry with paper towel and season both sides.
  • In a large frying pan, heat a drizzle of olive oil over high heat. 
  • Cook salmon skin-side down first, 2-4 minutes each side.
  • Transfer salmon to a baking dish and bake until cooked through, 8-12 minutes.
  • In the last 5 minutes of cook time, spoon tomato sugo over salmon, sprinkle with Cheddar cheese and bake until cheese is melted and golden.
Cook the broccoli

  • While salmon is baking, wipe out the frying pan and return to medium-high heat with a drizzle of olive oil. 
  • Add broccoli florets and cook, tossing, until softened, 5-6 minutes. 

TIP: Add a dash of water to the pan to help speed up the cooking process.

Finish & serve

  • Divide cheesy tomato salmon, chat potatoes and sautéed broccoli between plates to serve. Enjoy!
