Flatbread pizzas take the cake for being just as tasty as their pizza counterparts but adds some extra excitement to dinnertime that your average pizza lacks. Each mini pizza is loaded with tasty caramelised onion and plant-based bacon for total flavour and with a drizzle of garlic aioli and a bright salad, this is one meal you won't want to share.

• Remove wire racks from oven. Preheat oven to 220°C/200°C fan-forced. • Meanwhile, thinly slice brown onion.
• In a large frying pan, heat a drizzle of olive oil over medium-high heat. Cook onion, stirring regularly until softened, 5-6 minutes. • Reduce heat to medium. Add the balsamic vinegar, brown sugar and a splash of water and mix well. Cook until dark and sticky, 3-5 minutes. • Add plant-based bacon bits, stirring, until combined, 4-5 minutes.
• Lay each flatbread on a flat surface, rough sidedown. Using the back of a spoon, spread tomato paste evenly across the flatbreads. • Top evenly with onion and plant-based bacon bits. Sprinkle with shaved Parmesan cheese and shredded Cheddar cheese.
• Transfer flatbread pizzas to oven wire racks. Bake until cheese is melted and golden, 10-12 minutes. • Meanwhile, roughly chop tomato and cucumber.
• In a medium bowl, combine tomato, cucumber, salad leaves, a drizzle of olive oil and of balsamic vinegar. Season to taste.
• Divide bac'n and caramelised onion mini pizzas between plates. Drizzle over garlic aioli. • Serve with cucumber and rocket salad. Enjoy!
