Cooking Steps

Roast the potatoes

  • Preheat oven to 240°C/220°C fan-forced.
  • Halve chat potatoes. Place potatoes on a lined oven tray. Drizzle with olive oil, sprinkle over Aussie spice blend and toss to coat.
  • Roast until tender, 25-30 minutes.
Make the cheesy broccoli

  • Meanwhile, cut broccoli into small florets, then roughly chop the stalk. Add broccoli and a splash of water to a microwave-safe bowl, then cover with a damp paper towel.
  • Microwave broccoli on high until just tender, 2-4 minutes. Drain and pat broccoli dry with paper towel.
  • Place broccoli on a second lined oven tray. Using the flat base of a bowl, crush broccoli until about 1cm thick. Drizzle with olive oil and season with salt and pepper. Sprinkle with Parmesan cheese.
  • Roast until golden, 12-15 minutes.

TIP: Patting the broccoli dry helps it crisp up in the oven!

  • While the broccoli is baking, heat a large frying pan over medium-high heat with enough olive oil to coat the base.
  • Cook plant-based crumbed chicken until golden and heated through, 2-3 minutes on each side.
  • Transfer to a paper towel-lined plate.

  • In a medium bowl, combine gravy granules and the boiling water, whisking, until smooth, 1 minute.
  • Divide classic Aussie chick'n, chat potatoes and cheesy broccoli trees between plates. Serve with gravy. Enjoy!
