• Trim and roughly chop pea pods.
• Remove centre veins from makrut lime leaves, then very finely chop.
• In a medium bowl, combine chicken tenderloins, sweet soy seasoning
(see ingredients) and a drizzle of olive oil.
TIP: The makrut lime leaves are fibrous so you want to cut them into small pieces!

• In a large frying pan, heat a drizzle of olive oil over medium-high heat.
• Cook chicken tenderloins, tossing, until browned and cooked through, 3-4 minutes each side. Set aside to cool slightly.
TIP: Chicken is cooked through when it is no longer pink inside.

• While the chicken is cooking, combine fish sauce & rice vinegar mix, a drizzle of olive oil and sweet chilli sauce in a large bowl. Season to taste with salt and pepper.
• Just before serving, top the dressing mixture with slaw mix, mixed salad leaves, pea pods and makrut lime leaves. Toss to combine and season to taste.

• Divide Vietnamese-style pea pod salad between bowls. Top with chicken.
• Sprinkle with crushed peanuts to serve. Enjoy!
