Cooking Steps

  • Preheat oven to 220°C/200°C fan-forced.
  • Zest orange to get a pinch then slice in half.
  • Place the butter into a small bowl and microwave in 10 second bursts or until melted.

  • Meanwhile, in a medium bowl, beat cream cheese using electric beaters until smooth, 1-2 minutes. Add thickened cream, orange zest, a good squeeze of orange juice and the white sugar. Beat until well combined and smooth, 1-2 minutes.
  • Divide the cheesecake mixture evenly in serving glasses or jars (1 per person). Refrigerate for 6 hours or overnight.

  • While the cheesecake is setting, add the melted butter and a pinch of sea salt flakes to the oat mix and stir to combine.
  • Tip onto a lined oven tray and spread into a single layer. Bake until golden, 8-10 minutes. Set aside to cool then break apart the crumb. Store in an airtight container.

TIP: Crumb can burn quickly, so don't spread the crumb too far apart on the tray!

TIP: If your oven tray is crowded, divide between two trays.

  • To serve, slice passionfruit in half and scoop out pulp.
  • Roughly chop nectarine, carefully removing the stone.
  • Top zesty cheesecake pots with nectarine, passionfruit and oat crumb.
  • Store any remaining oat crumb in an airtight container. Enjoy!
