Cooking Steps

Get prepped

• Thinly slice cucumber into half-moons.
• Halve snacking tomatoes. 
• Drain sweetcorn.
• In a medium bowl, combine beef strips, peri-peri seasoning and a drizzle of 
olive oil. 

Make the garlic croutons

• Slice bake-at-home ciabatta in half lengthways. Toast or grill ciabatta to 
your liking.
• In a medium microwave-safe bowl, microwave garlic paste and the butter in 
10 second bursts, until melted and fragrant. Season with salt and pepper.
• Roughly chop toasted ciabatta, then add to bowl with garlic butter. Toss to coat. 

Bring it all together

• In a large frying pan, heat a drizzle of olive oil over high heat. When oil is hot, 
cook beef strips and sweetcorn, tossing, in batches, until browned and cooked 
through, 1-2 minutes. Transfer to a plate.
• In a large bowl, combine dill & parsley mayonnaise and a drizzle of vinegar. Add 
gourmet leaf mix, cucumber, snacking tomatoes and garlic croutons and toss 
to combine. Season to taste. 
TIP: Cooking the meat in batches over high heat helps it stay tender. 
TIP: Cover the pan with a lid if the kernels are ‘popping’ out. 

Finish & serve

• Divide garlic crouton salad between bowls.
• Top with peri-peri beef to serve. Enjoy!
