Beat the winter chill with a steaming bowl of our one-pot Vietnamese beef noodle soup. We’ve loaded a fragrant, spiced broth with tender beef, slurp-able noodles and fresh Asian greens to create the ultimate cosy comfort, minus the mountain of washing up. Finished with some coriander, it’s basically a warm hug from the inside out.

Cooking Steps

Get prepped

  • Boil the kettle. Place bean vermicelli noodles in a medium heatproof bowl. 
  • Add enough boiling water to cover noodles. Cover and set aside until tender, 4-6 minutes.
  • Drain, rinse and return to bowl with a drizzle of olive oil.
  • Meanwhile, roughly chop Asian greens. Drain sweetcorn.
Start the noodle soup

• In a large saucepan, heat a drizzle of olive oil over high heat. • When oil is hot, cook beef strips, tossing, in batches until browned and cooked through, 1-2 minutes. Transfer to a plate. • Return large saucepan to high heat with a drizzle of olive oil. • When oil is hot, cook Asian greens, sweetcorn, until tender, 2-3 minutes. Add ginger paste and sweet soy seasoning and cook, until fragrant, 1 minute. TIP: Cooking the meat in batches over a high heat helps it stay tender.

Bring it all together

• To the saucepan, add the boiling water (3 cups for 2 people / 6 cups for 4 people), oyster sauce and stock concentrate, the soy sauce and brown sugar, stirring to combine. Bring to the boil. • Add trimmed green beans, then cover with a lid. Reduce to a simmer and cook, 4-5 minutes. • In the last minute, add cooked noodles, cooked beef and gently stir with a fork to separate. Season with salt and pepper to taste.

Finish & serve

• Divide Vietnamese beef noodle soup between bowls. Tear over coriander and top with sesame seeds to serve. Enjoy!
