Roughly chop mint leaves and semi-dried tomatoes. Drain goats cheese. Toast or grill sliced sourdough to your liking.
Meanwhile, combine tomatoes and mint in a small bowl. Crumble in goats cheese and gently stir to combine. Season with pepper.
Spread each slice with hummus. Top with some semi-dried tomato, goats cheese and mint tomato mixture. Sprinkle with pepitas to serve.
