Cooking Steps

Cook the prawns

  • In a large frying pan, heat a drizzle of olive oil over medium-high heat.
  • Cook peeled prawns, tossing, until pink and starting to curl up, 3-4 minutes.
  • Add Abuela's marinade and cook until combined and fragrant, 1-2 minutes. 

TIP: Add a splash more water if the filling looks dry!

Assemble & toast the sandwich

  • Spread sliced sourdough with mustard mayo then fill with prawns, cheddar cheese and pickled jalapenos.
  • Heat sandwich in a sandwich press for 2-3 minutes, until cheese is melted.
Make the salsa

  • While sandwich is toasting, roughly chop cucumber and tomato.
  • In a medium bowl, combine cucumber, tomato, a drizzle of white wine vinegar and olive oil. Season.
Finish & serve

  • Slice cuban prawns sandwich in half.
  • Serve with cucumber salsa and corn chips. Enjoy!
