Take a trip to Havana with this Cuban inspired prawn sourdough sandwich, featuring tender prawn tossed in a zesty Abuela’s marinade. We’ve topped it with a refreshing cucumber salsa and pickled jalapeños for a spicy kick, served with crunchy corn chips on the side.

- In a large frying pan, heat a drizzle of olive oil over medium-high heat.
- Cook peeled prawns, tossing, until pink and starting to curl up, 3-4 minutes.
- Add Abuela's marinade and cook until combined and fragrant, 1-2 minutes.
TIP: Add a splash more water if the filling looks dry!
- Spread sliced sourdough with mustard mayo then fill with prawns, cheddar cheese and pickled jalapenos.
- Heat sandwich in a sandwich press for 2-3 minutes, until cheese is melted.
- While sandwich is toasting, roughly chop cucumber and tomato.
- In a medium bowl, combine cucumber, tomato, a drizzle of white wine vinegar and olive oil. Season.
- Slice cuban prawns sandwich in half.
- Serve with cucumber salsa and corn chips. Enjoy!
