- Preheat oven to 240°C/220°C fan-forced. Cut potato into fries.
- Place on a lined oven tray. Drizzle with olive oil, season with salt and toss to coat.
- Bake until tender, 20-25 minutes.
TIP: If your oven tray is crowded, divide between two trays.
- Meanwhile, thinly slice red onion (see ingredients).
- In a small bowl, combine the vinegar and a good pinch of sugar and salt.
- Scrunch sliced onion in your hands, then add it to pickling liquid. Add enough water to just cover onion. Set aside.
- When the fries have 15 minutes remaining, set your air fryer to 200°C.
- Place mozzarella cauliflower bites into the air fryer basket and cook until browned and heated through, 10-12 minutes.
TIP: No air fryer? Place mozzarella cauliflower bites on a lined oven tray. Cook bites for 8-12 minutes until cooked through.
- Finely shred cos lettuce.
- Thinly slice tomato into wedges.
- In a large bowl, combine hot sauce, BBQ sauce and a splash of water. Set aside.
- Cut chicken breast into 2cm chunks.
- In a large frying pan, heat a drizzle of olive oil over high heat.
- When oil is hot, cook chicken, tossing occasionally, until browned and cooked through, 5-6 minutes.
TIP: Chicken is cooked through when it is no longer pink in the middle.
- Slice hot dog buns in half lengthways, 3/4 of the way through.
- Place buns on lined oven tray and bake until golden, 4-5 minutes.
- In a second large bowl, combine cos, tomato, a drizzle of olive oil and vinegar. Season.
- When the bites are done, to the bowl with buffalo sauce, add mozzarella cauliflower bites and toss to coat.
- Fill cut side of buns with buffalo mozzarella cauliflower bites, chicken and some cos salad. Drizzle over ranch dressing.
- Serve with potato fries and remaining salad. Enjoy!
TIP: No need to overfill the buns, any extra filling can be served on the side.
