Cooking Steps

Soak the noodles & get prepped
1

• Boil the kettle. Place bean vermicelli noodles in a medium heatproof bowl.
• Add enough boiling water to cover noodles. Cover and set aside until tender,  4-6 minutes.
• Drain, rinse and return to bowl with a drizzle of olive oil.
• Slice lemon into wedges.

Cook the beef
2
  • Meanwhile, in a large frying pan, heat a drizzle of olive oil over high heat.
  • When oil is hot, cook beef strips and sweet soy seasoning, tossing, in batches until browned and cooked through, 1-2 minutes. Transfer to a plate.

TIP: Cooking the meat in batches over a high heat helps it stay tender.

Make the soup
3

• Return the saucepan to medium-high heat.
• SPICY! This curry paste is hot! Add less if you’re sensitive to heat. Cook green Thai curry paste, stirring until fragrant, 1 minute.
• Add coconut milk, stock concentrate, the water and soy sauce. Bring to the boil, then reduce heat to medium and simmer until slightly thickened, 3-4 minutes.
• Return cooked chicken to the pan, along with the noodles. Add Asian stir-fry mix and cook until softened, 1-2 minutes.
• Remove from heat, then add a good squeeze of lemon. Season to taste with salt and pepper.

Finish & serve
4

• Divide one-pot green Thai beef curry soup between bowls.
• Top with any remaining lemon wedges. Enjoy!
