Heat olive oil in a large frying pan over medium-high heat. Grab a bowl. Add spice blend, a drizzle of olive oil and chicken. Season generously and toss. Cook chicken until cooked through, 3-4 mins each side.
Meanwhile, chop tomato and cucumber. Slice the lemon in half.Grab a bowl. Add tomato and cucumber. Season, then add a squeeze of lemon juice and toss. Chop the mint leaves
Zap rice in microwave until steaming, 2-3 mins.Transfer to large bowl. Stir baby spinach and currants through the rice. Divide rice pilau between bowls, then top with chicken, salsa, mint, yoghurt and cashews to serve.
