Cooking Steps

  • Add the water to a medium saucepan and bring to the boil.
  • Add jasmine rice, stir, cover with a lid and reduce heat to low.
  • Cook for 10 minutes, then remove the pan from heat and keep covered until rice is tender and all the water is absorbed, 10 minutes.

TIP: The rice will finish cooking in its own steam so don't peek

  • Meanwhile, thinly slice cucumber into rounds.
  • In a medium bowl, combine the vinegar and a good pinch of sugar and salt.
  • Add cucumber to pickling liquid. Add enough water to just cover cucumber. Set aside.

TIP: Slicing the cucumber very thinly helps it pickle faster!

  • Trim and halve green beans.
  • Thinly slice carrot into sticks. 
  • Thinly slice garlic.

  • In a large frying pan, heat a drizzle of olive oil over medium-high heat. 
  • Cook green beans and carrot, tossing, until tender, 4-5 minutes.
  • In the last minute, add garlic and cook untill fragrant. Transfer to a bowl, season and cover to keep warm.

  • Wipe out frying pan and return to high heat. Cook lamb mince (no need for oil!), breaking up with a spoon until just browned and peeled prawns, tossing, until pink and starting to curl up, 3-4 minutes. Add sweet soy seasoning and cook until fragrant, 1 minute.
  • Remove from heat, add gochujang and a splash of water, tossing to coat. 

TIP: Cooking the meat in batches over a high heat helps it stay tender.

  • Drain pickled cucumber. 
  • Divide rice between bowls. Top with gochujang lamb and prawns, garlicky veggies and pickled cucumber. 
  • Sprinkle over sesame seeds to serve. Enjoy!
