Cooking Steps

Bake the fries

  • Preheat oven to 240°C/220°C fan-forced. Cut potato into fries.
  • Place potato fries on a lined oven tray. Drizzle with olive oil and toss to coat.
  • Bake until tender, 20-25 minutes. 
  • Sprinkle with chicken salt and toss to coat. Transfer to a bowl. 

TIP: If your oven tray is crowded, divide between two trays.

Cook the sweetcorn

  • Meanwhile, drain sweetcorn.
  • Heat a large frying pan over high heat.
  • Cook corn kernels until lightly browned, 4-5 minutes. 
  • Transfer to a bowl and add the butter. Season and cover to keep warm.

TIP: Cover the pan with a lid if the kernels are “popping” out.

Get prepped

  • Chop broccoli (including stalk!) into small florets.
  • Using paper towel, pat chicken breast dry and cut into 2cm chunks.
  • In a large bowl, combine chicken, Aussie spice blend and the olive oil (1/2 tbs for 2 people / 1 tbs for 4 people). 
  • Add cornflour and the plain flour to the chicken mixture and toss to coat.
Cook the chicken

  • Wipe out frying pan and return over high heat. 
  • In a large frying pan over high heat, heat enough olive oil to coat the base. When oil is hot, dust off any excess flour from chicken and cook, tossing occasionally, until browned and cooked through, 5-6 minutes (cook in batches if your pan is getting crowded). Transfer to a paper towel-lined plate. Season with salt. 

TIP: Chicken is cooked through when it is no longer pink inside.

Steam the broccoli & make the slaw

  • Whilst the chicken is cooking, place chopped broccoli on a large microwave-safe plate. Cover with a damp paper towel.
  • Microwave broccoli on high, 4 minutes. Drain, season with salt and pepper and set aside.
  • In a medium bowl, combine slaw mix and the mayonnaise with a drizzle of vinegar. 
Finish & serve

  • Just before serving, in a medium bowl, combine gravy granules and the boiling water, whisking, until smooth, 1 minute.
  • Bring everything to the table.
  • Build your own plate with Aussie fried chicken, chicken salt chippies, steamed broccoli, buttery sweetcorn, coleslaw & gravy.
