
Bite into these golden, lip-smacking corn cobs complete with an easy, cheesy topping. The addition of a herby garlic butter plus a creamy fetta topping really elevates the humble corn cob to the next level, for a mouthwatering side that will steal the show!

• Preheat oven to 240°C/220°C fan-forced.
• Cut corn cobs in half.
• Finely chop garlic and parsley (reserve a few leaves for garnish!).
• In a small bowl, add the softened butter, chopped parsley and garlic.
Season with pepper and mash to combine.

• Place corn on a lined oven tray.
• Spread herby garlic butter over corn and roast until just tender and slightly
charred, 15 minutes.

• Remove tray from oven and sprinkle Cheddar cheese and Parmesan
cheese over corn.
• Roast until cheese is melted and golden, 5-8 minutes.

• Transfer roasted corn cobs to a serving dish.
• Crumble over fetta cubes and garnish with remaining parsley. Enjoy!
