Cooking Steps

  • Thinly slice spring onion.
  • Finely shred cos lettuce.
  • Cut corn cobs in half.

  • Add corn and a splash of water to a microwave-safe bowl, then cover with a damp paper towel.
  • Microwave corn on high until just tender, 2-4 minutes.
  • Drain corn, then return to the bowl and cover to keep warm.

  • Meanwhile, in a large frying pan, heat a drizzle of olive oil over medium-high heat.
  • When oil is hot, cook chicken breast strips and sweet soy seasoning, tossing, in batches until browned and cooked through, 4-5 minutes (cook in batches if your pan is getting crowded).
  • Remove pan from heat, add gochujang and a splash of water, turning chicken to coat.

TIP: The chicken is cooked when it is no longer pink inside.

  • Microwave flatbreads on a plate in 10 second bursts until warmed through.
  • Spread each flatbread with the mayonnaise. Top with cos, chicken and plant-based kimchi.
  • Divide gochu-bang chicken flatbreads and steamed corn between plates. Garnish with spring onion to serve. Enjoy!
