Cooking Steps

  • Thinly slice tomato into wedges. Thinly slice brie. 
  • Cut or tear bake-at-home ciabatta into bite-sized chunks. 
  • Roughly chop mild chorizo.

  • In a large frying pan, heat a drizzle of olive oil over medium-high heat. Cook ciabatta and chorizo until golden, 6-8 minutes. Transfer to a paper-towel lined plate.

  • Add green beans and a splash of water to a large microwave-safe bowl, then cover with damp paper towel. 
  • Microwave green beans on high until just tender, 2-4 minutes.
  • Drain green beans, then return to the bowl and allow to cool slightly.

  • To bowl with green beans, add mixed salad leaves, tomato, and mustard cider dressing. Toss to combine and season to taste.
  • Divide salad between bowls. Top with smokey chorizo, croutons and brie. 
  • Sprinkle with walnuts to serve. Enjoy!
