• Grate carrot. • Cut tomato into thin wedges.

• In a large frying pan, heat a drizzle of olive oil over high heat. Cook beef strips and Mexican fiesta spice blend, stirring, in batches until browned and cooked through, 1-2 minutes. Remove from heat and stir in mild chipotle sauce and the butter.

TIP: Cooking the meat in batches over a high heat helps it stay tender.

• In a large bowl, combine mixed salad leaves (see ingredients), tomato, carrot, a drizzle of white wine vinegar and olive oil. Season to taste. • Microwave mini flourtortillas on a plate in 10 second bursts until warmed through.
