Thinly slice apple. Roughly chop pecans. In a shallow bowl, combine the sweet golden spice blend and sugar.

Heat a large frying pan over medium-high heat with butter. Cook apple, stirring regularly until softened, 3-5 minutes. Reduce heat to medium. Cook until reduced and sticky, 2-3 minutes. Transfer to a small bowl.

In a large shallow bowl, whisk egg and light thickened cream to combine. Add brioche slices to egg mixture and gently turn to coat. Set aside to soak for 10 minutes.

While the brioche is soaking, wash out the frying pan, then return to medium-high heat. Toast pecans, tossing until golden, 2-3 minutes. Transfer to a bowl.

Return the frying pan to medium heat with a drizzle of olive oil. When the oil is hot, gently remove brioche slices from egg mixture, and cook in batches, until lightly browned and set, 2-4 minutes each side. Transfer cooked brioche to spiced sugar and turn to lightly coat. TIP: Add some butter to the plan for extra flavour!

Divide the brioche french toast between plates. Top with the caramelised apple, pecans, maple-flavoured syrup and remaining longlife cream.
