• Preheat the oven to 240°C/220°C fan-forced. Cut potatoes (unpeeled) into 1cm fries. • Place the fries onto the oven tray lined with baking paper. Season with salt and pepper and drizzle with olive oil. Toss to coat, then bake until tender, 20-25 minutes.
• Finely chop garlic (or use a garlic press). Cut corn cob in half. Thinly slice tomato. • In a medium bowl, combine slaw mix, half the garlic aioli, white wine vinegar and a pinch of salt and pepper. • In a small bowl, combine the butter and a small pinch of mild Caribbean jerk seasoning (the rest will be used in step 3!). • Bring a medium saucepan of salted water to the boil. ~~~~~~~~~~ MODULAR STEP ~~~~~~~~~~ • Finely chop garlic (or use a garlic press). Cut corn cob in half. Thinly slice tomato. • In a medium bowl, combine slaw mix, half the garlic aioli, white wine vinegar and a pinch of salt and pepper. • In a small bowl, combine the butter and a small pinch of mild Caribbean jerk seasoning (the rest will be used in step 3!). • Bring a medium saucepan of salted water to the boil. • In a large frying pan, heat a drizzle of olive oil over medium-high heat. Cook bacon, turning, until golden, 4-5 minutes. Transfer to a paper-towel lined plate and set aside.
• In a large bowl, combine garlic, egg, pork mince, a pinch of salt and pepper, fine breadcrumbs and the remaining mild Caribbean jerk seasoning. • Shape the mixture into patties slightly larger than your burger buns (make 1 patty per person). Set aside. • In a large frying pan, heat a drizzle of olive oil over medium heat. Add the patties and cook, turning, until browned and cooked through, 4-5 minutes.
• While the patties are cooking, place corn cobs into the pan of boiling water. Cook until tender and bright yellow, 5 minutes. Drain.
• Place bake-at-home burger buns on a wire rack in the oven until heated through, 2-3 minutes.
• Build your burgers by spreading a layer of the remaining aioli over the base of a bun. • Top with the Jerk pork burger, tomato and slaw. Serve with the fries and corn cobs. • Spread the Jerk butter over the corn.
