Cooking Steps

  • In a large frying pan, heat a drizzle of olive oil over medium-high heat.
    Cook chicken thigh, turning occasionally, until browned and cooked through, 10-14 minutes.
  • Remove from heat, add Hainanese paste and a splash of water, turning chicken to coat.

  • Meanwhile, using a meat mallet or rolling pin, smash cucumbers until they split open on the sides, then roughly chop.
  • Using a vegetable peeler, peel carrot into ribbons.
  • Halve snacking tomatoes. Slice lime into wedges.

  • In a large bowl, combine mixed salad leaves, tomatoes, carrot, smashed cucumber, fish sauce & rice vinegar mix, a good squeeze of lime juice and a drizzle of olive oil. Season to taste.

  • Slice chicken.
  • Divide smashed cucumber salad and Hainanese chicken between bowls.
  • Tear over coriander (including stalk!) and garnish with sesame seeds. Serve with any remaining lime wedges.  Enjoy!
