olive oil
• Heat olive oil in a frying pan over medium-high heat • Cook carrot & zucchini mix, until tender, 4-6 mins • Add garlic paste, tossing to combine, 1 min. Season. Transfer to serving plates
• Transfer mashed potato to a heatproof bowl • Microwave until hot and steaming, 3 mins • Stir through shaved Parmesan. Season with pepper
• Return pan to medium-high heat with a drizzle of olive oil • Cook chicken until cooked through, 3-4 mins each side • Remove from heat. Add gravy and a splash of water, turning to coat • Add mash to plates with veggies. Top with chicken and gravy. Tear over parsley to serve
