Cooking Steps

  • Thinly slice cucumber into half-moons.
  • Thinly slice spring onion.

  • In a large frying pan, heat a drizzle of olive oil over medium-high heat.
  • When oil is hot, crack the eggs into the pan. Cook until egg whites are firm and yolks are cooked to your liking, 4-5 minutes.
  • Transfer to a plate and cover to keep warm.

  • Wipe out pan and return to high heat (no need for oil!).
  • Cook beef mince, breaking up with a spoon, until browned and cooked through, 3-4 minutes.
  • Add sweet soy seasoning and cook until fragrant, 1 minute.
  • Meanwhile, microwave basmati rice until steaming, 2-3 minutes.

  • Divide rice, beef, julienned carrot and cucumber between bowls. Drizzle carrot with some sesame oil.
  • Top with fried eggs, gochujang, plant-based kimchi.
  • Garnish with spring onion and sesame seeds. Enjoy!
