Cooking Steps

Bake the fries

  • Preheat oven to 240°C/220°C fan-forced. Cut potato into fries.
  • Place on a lined oven tray. Drizzle with olive oil and toss to coat.
  • Bake until tender, 20-25 minutes.

TIP: If your oven tray is crowded, divide between two trays.

Cook the fish

  • When the fries have 10 minutes remaining, in a large frying pan, heat a drizzle of olive oil over medium-high heat. Pat barramundi dry with paper towel and season both sides.
  • When oil is hot, cook barramundi, skin-side down first, until just cooked through, 4-5 minutes each side (depending on thickness). Remove skin if preferred.


TIP: Patting the skin dry helps it crisp up in the pan!
TIP: White fish is cooked through when the centre turns from translucent to white.

Get prepped & heat the buns

  • Meanwhile, finely shred baby cos lettuce (see ingredients).
  • Halve bake-at-home burger buns. Place buns, cut-side up, on a lined oven tray and sprinkle with Cheddar cheese.
  • Bake until cheese is melted, 2-3 minutes.
Finish & serve

  • To the tray with fries, sprinkle over chicken salt (see ingredients) and toss to coat.
  • Spread burger bun bases with tartare sauce. Top with shredded cos and barramundi.
  • Divide cheesy grilled barramundi sandwich and chicken salt fries between plates. Enjoy!
