Tender barramundi is slathered with tangy tartare sauce and stacked inside a toasted burger. Served alongside golden fries dusted in iconic chicken salt, this takes takeaway fish-and-chip night to a whole new level.

- Preheat oven to 240°C/220°C fan-forced. Cut potato into fries.
- Place on a lined oven tray. Drizzle with olive oil and toss to coat.
- Bake until tender, 20-25 minutes.
TIP: If your oven tray is crowded, divide between two trays.
- When the fries have 10 minutes remaining, in a large frying pan, heat a drizzle of olive oil over medium-high heat. Pat barramundi dry with paper towel and season both sides.
- When oil is hot, cook barramundi, skin-side down first, until just cooked through, 4-5 minutes each side (depending on thickness). Remove skin if preferred.
TIP: Patting the skin dry helps it crisp up in the pan!
TIP: White fish is cooked through when the centre turns from translucent to white.
- Meanwhile, finely shred baby cos lettuce (see ingredients).
- Halve bake-at-home burger buns. Place buns, cut-side up, on a lined oven tray and sprinkle with Cheddar cheese.
- Bake until cheese is melted, 2-3 minutes.
- To the tray with fries, sprinkle over chicken salt (see ingredients) and toss to coat.
- Spread burger bun bases with tartare sauce. Top with shredded cos and barramundi.
- Divide cheesy grilled barramundi sandwich and chicken salt fries between plates. Enjoy!
