• Boil kettle • Place vermicelli noodles in a heatproof bowl. Add enough boiling water to cover noodles • Set aside until tender, 5-7 mins • Drain and refresh under cold water.

• Meanwhile, drain and chop pineapple • Heat olive oil in a frying pan over high heat • Cook pork and pineapple, tossing, until cooked, 3-4 mins • Add sweet & sour sauce and chicken stock pot stirring to coat, 1 min • Remove from heat.

• Thinly slice cucumber. Slice lime into wedges • In a bowl, add cucumber, salad mix, noodles, sweet chilli sauce, a squeeze of lime juice and dressing • Toss and season • Plate up the noodle slaw and pork • Top with torn mint, peanuts and remaining lime wedges.
