- Boil a full kettle of water. Pour boiled water into a large saucepan over high heat with a generous pinch of salt.
- Add spaghetti to the boiling water and cook until ‘al dente’, 9 minutes.
- Reserve pasta water (1/4 cup for 2 people / 1/2 cup for 4 people).
- Drain spaghetti, then return to saucepan.
- Meanwhile, thinly slice asparagus. Slice lemon into wedges.
- In a large frying pan, heat a drizzle of olive oil over medium-high heat.
- Cook diced bacon, breaking up with a spoon, until golden, 4-6 minutes.
- To frying pan, add asparagus and snacking tomatoes and cook until blistered and tender, 2-3 minutes.
- Add garlic paste and cook until fragrant, 1 minute.
- Stir in light cooking cream and the reserved pasta water and simmer until slightly reduced, 1-2 minutes.
- Remove pan from heat and add cooked spaghetti, baby spinach leaves, basil pesto and a squeeze of lemon juice, tossing to combine. Season to taste.
TIP: Add a splash of water if the dish looks dry!
