• Cut Asian greens in half lengthways. • Add Asian greens, trimmed green beans and a splash of water to a microwave-safe bowl, then cover with a damp paper towel. • Microwave veggies on high until just tender, 2-4 minutes. Drain and return to bowl and season with salt and pepper.

• Meanwhile, in a large frying pan, heat a drizzle of olive oil over medium-high heat. • When oil is hot, add plant-based mince and cook, undisturbed, until starting to brown underneath, 2 minutes.
• Break up with a spoon and cook, tossing occasionally, until just browned, a further 5-6 minutes.
• Remove from heat, stir in Teriyaki sauce, a slash of water and sesame seeds, tossing veggie mince to coat.

• While veggie mince is cooking, microwave basmati rice until steaming, 90 seconds.

• Thinly slice spring onion. • Divide rice and steamed Asian greens between bowls. Top rice with Teriyaki veggie mince. • Spoon over any remaining sauce from the pan. Sprinkle over spring onion. Enjoy!
