Prep the tortilla chips

  • Preheat oven to 200°C/180°C fan-forced.
  • Slice mini flour tortillas into wedges.
Get prepped

  • Thinly shred cos lettuce (see ingredients).
  • Thinly slice cucumber into sticks.
  • Thinly slice crunchino.
Form the meatballs

  • In a large bowl, combine beef mince, fine breadcrumbs, Tex-Mex spice blend and the egg. 
  • Using damp hands, roll beef mixture into mini meatballs (8-10 per person). Transfer to a plate.
Bake the tortilla chips

  • Spread tortilla wedges over a lined oven tray (don’t worry if they overlap).
  • Drizzle with olive oil and season with salt.
  • Bake until lightly golden and crisp, 8-10 minutes.
Cook the meatballs

  • Meanwhile, in a large frying pan, heat a drizzle of olive oil over medium-high heat.
  • Add meatballs, turning, until browned and cooked through, 8-10 minutes (cook in batches if your pan is getting crowded).
