Cooking Steps

Get prepped
1

• Grate carrot. • Trim and roughly chop pea pods. • Pat plain firm tofu dry (see ingredients) with paper towel and cut into 1cm chunks.
 • In a medium bowl, combine tofu, sweet soy seasoning and a drizzle of olive oil.

Cook the tofu
2

• In a large frying pan, heat a generous drizzle of olive oil over high heat. • When oil is hot, cook tofu, turning occasionally, until golden, 5-7 minutes.

Make the slaw
3

• Remove frying pan from heat and stir in sweet chilli sauce, the soy sauce, honey and a dash of water, until coated. Season to taste. • Meanwhile, in a medium bowl, combine carrot, pea pods, shredded wombok, baby spinach leaves, garlic aioli and a drizzle of olive oil. Season.

Finish & serve
4

• Divide slaw between bowls. Top with sweet chilli tofu. • Sprinkle over crushed peanuts. Tear over coriander to serve. Enjoy!
