Make crispy corn fritters even better by lacing them with Nan's special seasoning, and adding a handful of fetta cubes to the mixture; they add a little creaminess and get lovely and gooey with the sharp Cheddar in the pan. Serve with oven-baked SP fries and a subtly tart and peppery salad for some crunch.

Produced in a facility that processes eggs, milk, fish, peanuts, sesame, shellfish, soy, tree nuts, and wheat.

Cooking Steps

1
1

• Preheat oven to 240°C/220°C fan-forced. • Cut sweet potato into fries. • Place fries on a lined oven tray. Drizzle with olive oil, season with salt and toss to coat. • Bake until tender, 20-25 minutes.

TIP: If your oven tray is crowded, divide the fries between two trays.

2
2

• Meanwhile, drain sweetcorn. • Grate carrot, then squeeze out any excess moisture using a paper towel. • Thinly slice apple (see ingredients) into wedges.

TIP: Removing excess liquid from the carrot will help the fritters crisp up in the pan.

3
3

• In a large bowl, combine corn, carrot, the plain flour, the egg, the milk, Nan's special seasoning, vegetable stock powder and shredded Cheddar cheese. • Season with a pinch of pepper. • Crumble in fetta cubes. • Mix well to combine.

4
4

• In a large frying pan, heat enough olive oil to coat the base over medium-high heat. • When oil is hot, add heaped tablespoons of the fritter mixture, in batches, flattening with a spatula. Cook until golden, 3-4 minutes each side (don't flip too early!). • Transfer to a paper towel-lined plate. You should get 3-4 fritters per person.

TIP: Add extra oil between batches as needed.

5
5

• While the fritters are cooking, combine a drizzle of balsamic vinegar and olive oil in a medium bowl. • Season, then add apple and salad leaves. Toss to coat.

6
6

• Divide Nan's sweetcorn and fetta fritters, sweet potato fries and apple salad between plates. • Drizzle dill & parsley mayonnaise over the fritters. • Sprinkle with flaked almonds to serve. Enjoy!

Customer reviews

Review summary

Updated on July 2026
  • Flavour: The fritters are widely praised for their bold, well-seasoned flavour, with Nan's special seasoning and the fetta-cheddar combination drawing particular enthusiasm. Some found the fritters mild or bland, and suggested adding chilli, extra fetta, or caramelised onion to lift the taste.
  • Ease of prep: Most found this a quick and easy weeknight meal, though some noted the fritter mixture can be messy to work with and benefits from thorough draining of the corn and carrot.
  • Suggestions: Several customers added grated zucchini to the fritter batter for extra texture, while others reduced the vegetable stock powder to manage saltiness. Cooking the sweet potato fries in an air fryer was a popular tip for achieving a crispier result, and adding a little extra flour helped when the batter felt too wet.
  • Leftovers: Leftover fritters kept well and were enjoyed cold the next day in lunchboxes, wraps, or as a quick breakfast.
  • Portions: The fritter quantity was generally considered generous, though several customers felt the salad portion was too small and added extra greens or vegetables to round out the meal.
  • Salad: Opinion on the apple salad was mixed — some loved the crisp, peppery contrast it provided, while others found it bland and suggested adding extra vegetables or swapping the dressing for sweet chilli sauce.
