
This dish may be simple but it brings a satisfying combination of flavours and textures to the table for a mouth-watering, rustic side. Oven-roasted chickpeas are the ideal vessel for the aromatic and complex chermoula spice blend.

(May be present: Soy.)

Chickpeas

• Preheat the oven to 220°C/200°C fan-forced.
• Drain and rinse chickpeas.
• Pat chickpeas dry with paper towel.
TIP: Patting the chickpeas dry helps them crisp up in the oven!

• In a medium bowl, combine chickpeas, chermoula spice blend and a drizzle of olive oil. Toss to coat.

• Divide chickpeas between two lined oven trays, arranging in a single layer.
• Roast until crisp and slightly brown around the edges, tossing halfway through, 25-30 minutes.
• Remove from oven and set aside to cool. Season to taste.

• Transfer oven-roasted chickpeas to a serving bowl. Enjoy!
TIP: Chickpeas are best served immediately.
