Cooking Steps

Preheat the oven to 220°C/200°C fan-forced. Cut the potato (unpeeled) into 1 cm fries. TIP: Cut the potato to the correct size so it cooks in the allocated time. Spread the potato over two oven trays lined with baking paper. Drizzle with olive oil and season with salt (for the fries). Toss to coat and bake for 25-30 minutes, or until tender.

While the fries are baking, finely chop the brown onion. Finely chop the garlic (or use a garlic press). Pick and finely chop the oregano leaves. Roughly chop the cucumber and Roma tomato. Shred the cos lettuce. Zest the lemon until you have 1/2 tsp, then slice in half.

Heat a large frying pan over a medium-high heat with 1 tbs olive oil and 1/2 the garlic and cook, stirring, for 1 minute, or until fragrant. Transfer the garlic oil to a small bowl and allow to cool. Add the Greek yoghurt, a squeeze of lemon juice, a generous pinch of salt and pepper and mix well to combine.

Return the frying pan to a medium-high heat with a drizzle of olive oil. Add the onion and cook, stirring, for 2-3 minutes, or until softened. Increase the heat to high, then add the beef mince, and cook, breaking up with a wooden spoon for 3-4 minutes, or until browned. Add the remaining garlic, 1/2 tsp lemon zest, salt (for the beef), fresh oregano and lemon pepper spice blend and cook, stirring, for another 1-2 minutes or until fragrant. Add a generous squeeze of lemon juice to the pan and stir to combine. TIP: Add more lemon juice to taste if you like!

Heat the classic wraps on a plate in the microwave or in a sandwich press in 10 second bursts, or until warmed through.

Take everything to the table. Build your gyros by topping the classic wraps with cos lettuce, Greek-style beef, tomato, cucumber and a dollop of garlic yoghurt. Sprinkle the adult's portions with a small pinch of chilli flakes (if using). Serve the chips on the side. TIP: Add a few sneaky chips into your gyros!
