Cooking Steps

Shred the lettuce

To prepare the ingredients, slice the red onion. Peel and crush the garlic. Grate the carrot, cheese and zucchini. Shred the gem lettuce and pick the coriander leaves. Dice the tomatoes.

Cook lamb until browned

Heat the olive oil in a large frying pan. Add the red onion and garlic and cook, stirring, for 3 minutes or until softened. Add the beef mince and cook, breaking up with a wooden spoon, for 4-5 minutes or until browned. Add the Mexican spice mix (caution: spicy) and cook, stirring, for 1 minute or until fragrant. Add the carrot and zucchini and cook, stirring, for 3 minutes or until softened. Season to taste with salt and pepper.

Meanwhile, heat the classic tortilla wraps in the microwave or wrap in foil and place in a 180°C/160°C fan-forced oven for 5 minutes.

Serve the tortillas

To serve, fill the tortillas with the beef mince mixture, gem lettuce, fresh tomato and a handful of grated cheddar cheese. Garnish with the coriander leaves. Enjoy!
