Cooking Steps

Roast the pumpkin

  • Preheat oven to 220°C/200°C fan-forced.
  • Cut pumpkin into 1 cm-thick wedges.
  • In a large baking dish, place pumpkin. Drizzle with olive oil and season with salt and pepper. Toss to coat, then roast until just tender, 15 minutes.

TIP: Peel the pumpkin if you prefer and scrape out the seeds, if necessary! 

Make the sauce

  • Pick thyme leaves. Finely chop garlic. 
  • Heat a large frying pan over medium heat. Cook the butter, thyme and garlic until fragrant, 1 minute.
  • Add the plain flour and cook, stirring, until a thick paste forms, 2 minutes.
  • Remove pan from heat, then slowly whisk in cream until smooth.
  • Stir through half the Parmesan cheese and season.
Add the sauce

  • Pour sauce over pumpkin in the baking dish. Sprinkle with panko breadcrumbs (see ingredients) and the remaining Parmesan and drizzle with olive oil.
  • Bake pumpkin gratin until golden and bubbling, 10-15 minutes.
Finish & serve

  • Divide cheesy pumpkin gratin between plates. Enjoy!
