- Preheat oven to 220°C/200°C fan-forced.
- Cut pumpkin into 1 cm-thick wedges.
- In a large baking dish, place pumpkin. Drizzle with olive oil and season with salt and pepper. Toss to coat, then roast until just tender, 15 minutes.
TIP: Peel the pumpkin if you prefer and scrape out the seeds, if necessary!
- Pick thyme leaves. Finely chop garlic.
- Heat a large frying pan over medium heat. Cook the butter, thyme and garlic until fragrant, 1 minute.
- Add the plain flour and cook, stirring, until a thick paste forms, 2 minutes.
- Remove pan from heat, then slowly whisk in cream until smooth.
- Stir through half the Parmesan cheese and season.
- Pour sauce over pumpkin in the baking dish. Sprinkle with panko breadcrumbs (see ingredients) and the remaining Parmesan and drizzle with olive oil.
- Bake pumpkin gratin until golden and bubbling, 10-15 minutes.
- Divide cheesy pumpkin gratin between plates. Enjoy!
