
Tender beef steak meets its match in a vibrant rocket salad, tossed with sweet cherry tomatoes and a generous shaving of salty Parmesan. We’ve swapped out the usual spuds for a nutty crunch of toasted walnuts to keep the texture high and the carbs down. It’s a beautifully balanced, bistro-quality meal that delivers maximum flair with minimal effort.

vinegar (balsamic or white wine) (pantry)

• See ‘Top Steak Tips!’ (below left). Season beef rump with salt and pepper.
• In a large frying pan, heat a drizzle of olive oil over medium-high heat.
• When oil is hot, cook the beef for 3-4 minutes each side for medium-rare, or until
cooked to your liking. Transfer to a plate to rest.

• Meanwhile, trim and halve green beans.
• Halve snacking tomatoes.
• Roughly chop walnuts.

• While the beef is resting, wipe out the frying pan and return to medium-high heat
with a drizzle of olive oil.
• Cook green beans until tender, 4-5 minutes.
• Transfer green beans to a large bowl, then add spinach & rocket mix, tomatoes
and a drizzle of olive oil and vinegar. Season to taste with salt and pepper.

• Thinly slice beef, then season with a pinch of sea salt flakes (see ingredients).
• Divide beef steak and Italian rocket salad between plates.
• Sprinkle Parmesan cheese and walnuts over salad. Drizzle with balsamic
vinaigrette dressing (see ingredients) to serve. Enjoy!
