• Preheat oven to 240°C/220°C fan-forced. • Cut corn cobs in half. Place on a lined oven tray. • Drizzle with olive oil and season with salt and toss to coat. • Roast until tender and slightly charred, 15-20 minutes.
• Meanwhile, finely chop garlic and parsley. • In a small heatproof bowl, place the butter, parsley and garlic. Microwave until melted and fragrant, 10 second bursts.
• When corn has 5 minutes remaining, drizzle over the butter and roast until fragrant.
• Transfer fragrant garlic butter corn cobs to a serving plate. Enjoy!
