- Add the water to a medium saucepan and bring to the boil.
- Add jasmine rice, stir, cover with a lid and reduce heat to low.
- Cook for 10 minutes, then remove the pan from heat and keep covered until rice is tender and all the water is absorbed, 10 minutes.
TIP: The rice will finish cooking in its own steam so don't peek!
- Meanwhile, thinly slice Crunchino into rounds.
- In a medium bowl, combine the rice wine vinegar (for the pickle) and a good pinch of sugar and salt.
- Add Crunchino to pickling liquid. Add enough water to just cover Crunchino. Set aside.
TIP: Slicing the Crunchino very thinly helps it pickle faster!
- Thinly slice cucumber into rounds.
- Using a vegetable peeler, thinly slice carrot into ribbons.
- Cut chicken into 2cm chunks.
- In a large bowl, combine chicken, sweet soy seasoning and a drizzle of olive oil.
- In a large frying pan, heat a drizzle of olive oil over high heat.
- When oil is hot, cook chicken, tossing occasionally, until browned and cooked through, 5-6 minutes (Cook in batches if your pan is getting crowded).
- Remove pan from heat and add a splash of water, tossing to combine.
- To rice, add the rice wine vinegar (for the rice) and white sugar, stirring until well combined.
- Drain pickled Crunchino.
- Divide cheat's sushi rice between bowls. Top with sweet soy chicken, cucumber, carrot ribbons and pickled Crunchino.
- Drizzle over sesame dressing to serve. Enjoy!
