Finely chop the garlic (or use a garlic press). Finely grate the ginger. In a medium saucepan, melt the butter with a dash of olive oil over a medium heat. Add the garlic and 1/2 the ginger and cook until fragrant, 1-2 minutes. Add the jasmine rice, water and salt (for the rice) and bring to the boil. Reduce the heat to low and cover with a lid. Cook for 12 minutes, then remove from the heat and keep covered until the rice is tender and the water has absorbed, 10-15 minutes. TIP: The rice will finish cooking in its own steam so don't peek!

While the rice is cooking, cut the carrot (unpeeled) into half-moons. Thinly slice the brown onion (see ingredients list). Trim and halve the snow peas. Zest the lime (see ingredients list) then slice into wedges. Cut the beef rump into 2cm chunks.

In a small bowl, combine the sweet chilli sauce, soy sauce and water (for the sauce).

Season the beef with salt and pepper. In a large frying pan, heat a drizzle of olive oil over a high heat. When the oil is hot, cook the beef, turning, for 3-6 minutes (depending on thickness), or until cooked to your liking. Transfer to a plate to rest.

Wash out the frying pan and return to a medium-high heat with a drizzle of olive oil. Add the carrot and onion and cook until tender, 4-5 minutes. Add a drizzle of olive oil, the snow peas, lime zest, mixed sesame seeds and remaining ginger and cook until greens are tender, 1-2 minutes. Season with a pinch of salt and pepper. Reduce to a medium heat and add the sweet chilli sauce mix. Cook until heated through, 2 minutes. Remove from the heat and add a generous squeeze of lime juice. Return the beef to the pan and toss until coated.

Divide the garlic rice between bowls and top with the beef and veggies. Sspoon over any sweet chilli sauce left in the pan. Serve with the lime wedges on the side. Enjoy!
