• Boil the kettle. Half-fill a medium saucepan with the boiling water. • Add basmati rice and a pinch of salt and cook, uncovered, over high heat until tender, 12 minutes. Drain.

• Meanwhile, thinly slice red onion (see ingredients). • In a large frying pan, heat a drizzle of olive oil over medium-high heat. • Cook broccoli & carrot mix and onion with a dash of water, tossing, until tender, 5-6 minutes. • Add half the garlic paste, and cook, until fragrant, 1 minute. Transfer to serving bowls, season and cover to keep warm.

• While veggies are cooking, in a medium bowl, combine beef strips, Asian BBQ seasoning and cornflour (see ingredients). • Return frying pan to high heat with a generous drizzle of olive oil. • Cook beef strips in batches, until golden, 1-2 minutes. Return all beef to pan, and add remaining garlic paste, and cook until fragrant, 1 minute. • Stir in sweet & sour sauce and the water, and simmer until bubbling, 1 minute.

• Divide rice between bowls with garlic veggies. • Top rice with sweet and sour beef. • Sprinkle over sesame seeds to serve. Enjoy!
